If pumpkin is not available, use any other type of squash, or try rutabaga instead. This recipe is a good one to double - or even treble - for a crowd.

1 pound braising steak, diced
1 small pumpkin, about 1 pound diced flesh
1 medium onion, chopped
1 green pepper, seeded and sliced
1 tbsp paprika
2 garlic cloves, crushed
1 inch piece fresh ginger root, chopped
14 ounce can chopped tomatoes
1/4 pound baby corn cobs
1 cup beef stock
15 ounce can chick-peas, drained
15 ounce can red kidney beans, drained
salt and black pepper
method
1. Fry the diced beef without fat in a large flameproof casserole, stirring to seal it on all sides.
2. Stir in the pumpkin, onion and pepper, cook for a further 2 minutes, then add the paprika, garlic and ginger.
3 Stir in the tomatoes, corn and stock, then bring to the boil. Cover and simmer for 40-45 minutes or until tender.
4. Add the chick-peas and beans and heat thoroughly.
5. Adjust the seasoning with salt and pepper to taste and serve hot with couscous or rice.
