Jamaican Beef Stew

Cooking time: 3 1/2 hours

ingredients

serves 6
3 pound stewing beef, cut into 1 inch cubes
1/2 cup seasoned flour
1/4 cup butter
1/4 cup oil
2 onions, thinly sliced
1 green chilli, seeded and finely chopped
1 garlic clove, chopped
1 teaspoon ground ginger
14 ounce canned tomatoes
1/2 teaspoon dried thyme

method

1. Coat the beef cubes with the seasoned flour. Melt the butter with the oil in a saucepan. Add the steak cubes, in batches, and brown on all sides. Keep the browned cubes warm.

2. Add the onions, chilli, garlic and ginger to the pan and fry until the onions are softened.

3. Return the beef cubes to the pan and stir in the thyme and the tomatoes with their liquid.

4. Break up the tomatoes with the spoon. Cover and simmer very gently for 3 hours or until the meat is tender.
