Japanese Sardines

ingredients

serves 2 - 4
1/2 cup soy sauce
1/4 cup vinegar
2 tablespoons lemon juice
1 ounce fresh ginger root, peeled and chopped
2 garlic cloves, crushed
1 pound fresh sardines, washed and dried
2 tablespoons olive oil

method

1. Combine the soy sauce, vinegar, lemon juice, ginger and garlic in a small mixing bowl. Arrange the sardines in a shallow baking dish and pour the soy sauce mixture over the sardines. Leave in a cool place to marinate for 2 hours.

2. Heat the broiler to a high heat. Remove the sardines from the marinade and discard it. Pat the sardines dry. Line the grill (broiling) pan with foil and brush it with half the oil. Place the sardines in the pan and brush them with the remaining oil.

3. Cook the sardines for 3-5 minutes depending on their size, turning them once to brown the other sides.
