Japanese style Salmon

ingredients

serves 2
1 1/4 pound piece salmon fillet, with skin
4 tbsp dark soy sauce
4 tbsp mirin
2 tbsp sake
3/4 inch piece fresh root ginger, peeled and cut into slivers, plus extra to garnish
1 - 2 tbsp oil

method

1. Cut the salmon fillet widthways into 4 equal pieces. Put the soy sauce, mirin, sake and ginger slivers into a shallow bowl and mix together.

2. Add the salmon, turn to coat and leave to marinate in a cool place for 20 minutes.

3. Heat the oil in a non-stick skillet until very hot. Add the salmon and fry, turning occasionally, for about 5. minutes or until crisp all over.

4. Transfer to warmed plates and top with ginger slivers to garnish. Serve with plain boiled rice.
