2 pound middle neck of lamb
1 large onion, peeled and chopped
1 1/2 pound potatoes, peeled and diced
1/2 pound tomatoes, sliced
1 pint stock
salt and pepper
1 small can pimentos, cut into strips
1 small packet (8 ounce) frozen green beans
fresh mint if available
method
1. Preheat oven to very moderate, 170°C (325°F).
2. Trim meat, cut into chops and place in a casserole.
3. Add onion, potatoes and tomatoes, pour in stock and season with salt and pepper.
4. Cover closely with lid or foil and cook in centre of oven for about 2 hours, or until meat is tender.
5. Stir in pimento and frozen beans, cover with lid again and continue cooking for a further 30 minutes.
6. Serve sprinkled with chopped mint if available.

Frozen beans need to be thawed for 1 hour before use so they can be broken up and not added to casserole in one block, as this would slow down cooking time. A small can of drained green beans could be added for last 10 minutes cooking time in place of frozen beans.
