1. Top and tail beans and remove strings. Break or cut into short lengths. Melt the butter in a saucepan. Add the beans and cook for a few minutes. Season with salt and pour in the stock. Cook for 10 - 15 minutes till just tender.
2. Meanwhile, heat half the oil in a skillet. Halve the slices of bread and lightly brown them on both sides in the oil. Remove from pan and keep warm.
3. Add rest of oil to pan and heat. Sprinkle garlic salt over the lamb steaks. Cook the steaks for 5 minutes on each side. Sprinkle with salt, then with pepper mixed with ground mustard seed.
4. Mix chopped parsley into beans and spread over bottom of warmed serving dish. Put the lamb steaks on the bread and place on top of the beans. Garnish with tomatoes, cut into eighths, and a few parsley sprigs.
