1. Blanch, peel and chop tomatoes. Derind and chop bacon. Peel and slice onions. Peel and crush garlic. Heat oil in a flameproof casserole and fry onion and garlic till transparent. Add the chops and bacon and brown on all sides.
2. Add tomatoes, stock, lemon juice, thyme and seasoning. Cover and simmer for 30 minutes.
3. Blanch beans in boiling water for 5 minutes, then drain. Peel and slice the potatoes. Add potatoes to casserole and cook for 10 minutes. Add beans and cook for a further 15 minutes. Serve immediately.
