This unusual recipe isn't a normal tart with pastry, but an all-in-one savoury slice that is excellent served as an accompaniment to roast meat.

4 tbsp sweet butter
3/4 pound leeks, sliced thinly
3/4 pound onions, sliced thinly
2 cups self rising flour
1/2 cup hard white fat
2/3 cup water
salt and freshly ground black pepper
method
1. Preheat the oven to 200°C (400°F). Melt the butter in a pan and saute the leeks and onions until soft. Season well with salt and black pepper.
2. Mix the flour, fat and water together in a large bowl to make a soft but sticky dough. Mix into the leek mixture in the pan.
3. Place the contents of the pan in a greased shallow ovenproof dish and level the surface with a palette] knife.
4. Bake in the preheated oven for about 30 minutes, or until brown and crispy. Serve the tart sliced, as a vegetable side dish.
