8 slices belly of pork (thick bacon slices)
1/2 cup stale white breadcrumbs
3 - 4 pimento-stuffed olives, sliced
grated rind of 1 lemon
1 tablespoon chopped fresh parsley
salt and freshly ground black pepper
3 tomatoes
method
1. Heat the broiler, with the pan and grid in position, until very hot.
2. Mix the olives with the crumbs, lemon rind and parsley in a small bowl and season very generously.
3. Lay the pork (bacon) on the grid and broil under a fierce heat for 1 minute on each side, and then under a moderate to low heat for 6 - 9 minutes on each side until crisp and golden.
4. Using tongs, transfer the meat to a gratin dish.
5. Slice the tomatoes and arrange them over the meat. Sprinkle the breadcrumb mixture on top and pour on a little fat from the grill pan.
6. Reduce the heat to low and grill until the crumb mixture turns golden brown.
