Fresh sardines are popular in many southern European countries, where they are usually broiles or barbecued. In this recipe, a marinade containing plenty of lemon juice balances the richness of the fish.

1 tablespoon olive oil
Juice of 1 lemon
1 clove garlic, peeled and crushed
2 level tablespoons chopped fresh parsley
Freshly ground black pepper
2 pound fresh sardines, scaled and gutted, washed and dried with kitchen paper
Lemon wedges and parsley sprigs to garnish
method
1. Mix the oil, lemon juice, garlic and chopped parsley in a wide dish and season with pepper. Turn the fish in the mixture until coated, then cover and leave to marinate for 30 minutes.
2. Line the broiling pan with foil and lay the fish on the rack. Cook under a hot grill for about 8 minutes, turning once. Baste frequently with the marinade.
3. Lift the fish carefully onto a warmed serving dish, pour on the juices and garnish with lemon wedges and parsley sprigs.
Serve with spinach and rice cakes.
