Lemon zucchinis

This is a simple but refreshing dish of thinly sliced, tender zucchinis with a generous sprinkling of finely grated lemon zest, seasoned with flaky sea salt and black pepper.

ingredients

serves: 4
1 pound 2 ounce small zucchinis
1 1/2 tablespoons olive oil
1 lemon
Flaky sea salt and black pepper

method

1. Trim and rinse the zucchinis and slice them thinly diagonally

2. Heat the olive oil in a large skillet, then add the zucchinis and fry stirring them frequently, until they are tender.

3. Meanwhile, wash any wax off the lemon and finely grate the rind.

4. When the zucchinis are cooked, sprinkle the lemon rind over them and season well with flaky sea salt and black pepper.
