Liver, Bacon and Apple Hotpot

Cooking time: overnight soaking, then 1 hour 35 minutes

ingredients

serves 4
1 1/2 pound tart apples, peeled, cored and thinly sliced
2 medium-sized onions, thinly sliced
1 1/2 pound ox (beef) liver, thickly sliced and soaked overnight
14 ounce canned tomatoes, coarsely chopped
salt and freshly ground black pepper
2/3 cup beef stock
4 back bacon slices

method

1. Heat the oven to 180°C (350°F).

2. Put about one-third of the apple and onion slices on the bottom of a casserole.

3. Cover with half the drained liver slices, then half the tomatoes with their liquid. Season.

4. Repeat the layers and finish with the rest of the apple and onion slices. Pour in the stock and place the bacon on top.

5. Cover the casserole and bake for 1 1/2 hours.
