A Luxury bun round is always eaten up quickly because of the tempting aroma in the kitchen while it is baking.

2 1/4 cups All purpose flour
2 tablespoons margarine
1 cake (0.6 oz) yeast
4 tablespoons tepid milk
4 tablespoons tepid water
1 small egg, beaten
large pinch of salt
3 tablespoons superfine sugar
1/4 cup currants
1/4 pint heavy cream, whipped
2 heaped tablespoons strawberry spread
a little sifted Confectioner’s sugar to decorate
method
1. Sift the flour into a bowl.
2. Rub in the margarine.
3. Cream the yeast with a little of the tepid milk then add rest of tepid liquids and egg.
4. Make a well in the flour, then add yeast liquid and mix to a soft dough.
5. Knead dough until smooth and elastic.
6. Lightly grease or oil the inside of a large polythene bag.
7. Slip the bowl of dough into the bag
8. Leave in a warm place - not near direct heat or boiler - for about 1 1/2 hours, or until dough has risen to twice its size.
9. Remove from bag. Knead salt into risen dough with sugar and currants.
10. Form mixture into two flat, large rounds and put on to greased baking sheet.
11. Leave in a warm place for 20 minutes.
12. Preheat oven to moderately hot, 200°C (400°F).
13. Bake in centre of preheated oven for 25 - 35 minutes or until golden brown and cooked. Leave to cool.
14. Sandwich rounds with cream and spread; decorate top with Confectioner’s sugar, and serve the same day.
