Mackerel Casserole

ingredients

serves 4
2 mackerel, each weighing about 1 - 1 1/2 pound
3 tablespoons butter
salt
2 leeks, white parts only, finely sliced
1/2 pound canned tomatoes
1 tablespoon dill seeds
1/2 teaspoon paprika
juice of half a lemon
2/3 cup sour cream

method

1. Wash and fillet the mackerel and skin if preferred. Heat the oven to 180°C (350°F).

2. Use one-third of the butter to grease the inside of a casserole which will just hold the fillets in one layer and lay the fish in it.

3. Melt the remaining butter in a frying-pan and saute the leeks until soft. Add the tomatoes, dill seeds and paprika, mix together and transfer to the casserole.

4. Sprinkle in the lemon juice and pour the sour cream over the top. Cover the dish. Put into the oven and bake for 20 minutes.

5. Serve hot from the dish.
