3/4 cup butter, softened, plus extra to grease
1 1/4 cups All purpose flour
1 cup plus 2 tablespoons self rising flour
3/4 cup superfine sugar
1 tsp vanilla extract
3 large eggs, beaten
1-2 tbsp milk (optional)
2-3 thin slices citron peel
method
1. Grease and line a deep 7 inch round cake pan. Sift the plain and self rising flours together.
2. Cream the butter and sugar together in a bowl until pale and fluffy, then beat in the vanilla extract. Add the eggs, a little at a time, beating well after each addition.
3. Fold in the sifted flours using a metal spoon, adding a little milk if necessary to give a dropping consistency.
4. Spoon the mixture into the prepared tin and level the surface. Bake at 180°C (160°C fan oven) for 20 minutes. Lay the citron peel on the cake and bake for a further 30 minutes or until a skewer inserted into the centre comes out clean. Turn out and cool on a wire rack.
