Mandarins in Syrup

ingredients

serves 4
10 mandarin oranges
1 tbsp Confectioner’s sugar
2 tsp orange-flower water
1 tbsp chopped pistachio nuts

method

1. Thinly pare a little of the rind from one mandarin and cut it into fine shreds for decoration. Squeeze the juice from two mandarins and set aside.

2. Peel the remaining fruit, removing as much of the white pith as possible. Arrange the peeled fruit whole in a wide dish.

3. Mix the mandarin juice, sugar and orange-flower water and pour it over the fruit. Cover the dish and chill for at least an hour.

4. Blanch the shreds of mandarin rind in boiling water for 30 seconds. Drain, leave to cool and then sprinkle them over the mandarins, with the pistachio nuts, to serve.

Mandarin oranges look very attractive if you leave them whole, but you may prefer to separate the segments.
