Serve marmalade scones with morning coffee.

2 cups self rising flour
large pinch of salt
1/4 cup margarine
2 tablespoons white sugar
1 medium egg, beaten
milk to mix
4 heaped tablespoons rough-cut marmalade
rind of 1 small orange
method
1. Preheat oven to hot, 230°C (450°F).
2. Lightly grease a baking sheet.
3. Sift the flour with the salt into a large bowl.
4. Rub in the margarine.
5. Stir in the sugar.
6. Add the beaten egg and enough milk to mix to a soft, light dough.
7. Roll out dough to at least 1/2 inch thickness.
8. Using a plain 2 inch cutter, cut out seven rounds.
9. Put the rounds on a baking sheet and bake in centre of preheated oven for 10-15 minutes, or until golden.
10. Leave to cool on a wire rack.
11. Split the scones, and sandwich them with a little of the marmalade.
12. Remove the soft white pith from the orange rind. Using a sharp knife, cut the rind into fine shreds.
13. Put the rind in a pan, add water and boil for 3 minutes. Drain and rinse in cold water then drain again. Leave to cool.
14. Spread the rest of the marmalade on the top of the scones.
15. Sprinkle orange rind on top of marmalade and serve that day.

If short of time, buy one of the jelly marmalades that have fine shreds of peel throughout and use as a topping in place of the orange peel. Lemon marmalade would be equally good.
