These potatoes are very versatile and will perk up any meal.
Mango powder is available in specialist Indian shops.

3 potatoes
1 tbsp chopped fresh mint and cilantro, mixed
1 tsp mango powder
1 tsp salt
1 tsp crushed black peppercorns
1 red chilli, chopped
1 green chilli, chopped
4 tbsp low fat margarine
method
1. Place the potatoes in a large saucepan and cover with water. Bring to the boil and cook until soft enough to be mashed. Drain, then mash well.
2. Blend together the mint, cilantro, mango powder, salt, peppercorns, chillies and margarine in a small bowl.
3. Stir the mixture into the mashed potatoes and stir together thoroughly with a fork.
4. Serve warm as an accompaniment to meat or vegetarian dishes.
