A light, refreshing fruit salad, with no added sugar and virtually no fat, perfect for breakfast or brunch - or any time.
ingredients
serves 4
1/2 melon
1/2 pound fresh pineapple or 1/2 pound can pineapple chunks in own juice
1/2 pound seedless white grapes, halved
1/2 cup white grape juice
fresh mint leaves, to decorate (optional)
method
1. Remove the seeds from the melon half and use a melon bailer to scoop out even-size balls.
2. Using a sharp knife, cut the skin from the pineapple and discard. Cut the fruit into bite-size chunks.
3. Combine all the fruits in a glass serving dish and pour over the juice If you are using canned pineapple, measure the drained juice and make it up to the required quantity with the grape juice.
4. If not serving immediately, cover and chill. Serve decorated with mint leaves, if liked.
