The potatoes can be baked in advance in the oven, then reheated in the microwave on high (100%) for 3 - 4 minutes.

36 potatoes, about 1 1/2 inch in diameter, well scrubbed
1 cup thick soured cream
3 - 4 tablespoons snipped fresh chives
coarse salt, for sprinkling
method
1. Preheat the oven to 180"C/350°F. Place the potatoes on a baking sheet and bake in the oven for 30 - 35 minutes, or until the potatoes are tender when pierced with the tip of a sharp kitchen knife.
2. To serve, make a cross in the top of each potato and squeeze gently to open. Make a hole in the centre of each potato. Fill each one with soured cream, then sprinkle with the salt and the snipped chives. Serve immediately.
