1. Heat the oil in a large pan. Add the chopped onion, cover and cook over medium-low heat for 30 minutes, or until golden (caramelized onion is slow-cooked to bring out the sweetness, so don't rush this step).
2. Transfer to a bowl to cool.
3. Add the finely chopped bacon to the pan and cook until crisp. Mix with the onion, add 3 teaspoons wholegrain mustard and season with pepper.
4. Place a small amount in each pastry case.
5. Beat the eggs with the milk and pour over the onion and bacon.
6. Bake for 15 - 20 minutes, or until puffed and golden.

Preheat the oven to moderately hot 200°C (400°F) Gas 6.
2 sheets of ready-rolled shortcrust pastry
1. Grease two round-Based shallow 12-hole patty tins.
2. Lay 2 sheets of ready-rolled shortcrust pastry On a work surface and cut 12 rounds from each with an 3 inch cutter.
3. Line the tins with pastry, fill with one of the following suggestions and bake as instructed. Remove from the tins while warm and cool on wire racks.
