Mini Quiches (Creamy Herb)

ingredients

makes 24.
2 beaten eggs
2 tablespoons milk
1/2 cup cream
2 teaspoons chopped fresh chives
1 teaspoon each of chopped fresh dill, thyme and parsley
2 tablespoons grated Parmesan

method

1. Mix together eggs, milk, cream, chopped fresh chives and dill, thyme and parsley.

2. Pour into the pastry cases and sprinkle with grated Parmesan.

3. Bake for 15 - 20 minutes, or until puffed and golden.

Preheat the oven to moderately hot 200°C (400°F) Gas 6.

2 sheets of ready-rolled shortcrust pastry

1. Grease two round-Based shallow 12-hole patty tins.

2. Lay 2 sheets of ready-rolled shortcrust pastry On a work surface and cut 12 rounds from each with an 3 inch cutter.

3. Line the tins with pastry, fill with one of the following suggestions and bake as instructed. Remove from the tins while warm and cool on wire racks.
