Mini Quiches (Curried Apple and Onion)

ingredients

makes 24.
Oil
small thinly sliced onion
small peeled and grated green apple
1/4 teaspoon curry powder
1/2 cup milk
2 lightly beaten eggs
2 tablespoons cream
1/4 cup grated Cheddar

method

1. Heat a little oil in a pan. Lightly brown a small thinly sliced onion, then add a small peeled and grated green apple.

2. Add the curry powder and stir for 1 minute. Cool slightly. Spoon heaped teaspoons into the pastry cases.

3. Mix the milk, beaten eggs and cream in a jug and pour enough into each pastry case to cover the onion.

4. Sprinkle with a little grated Cheddar.

5. Bake for 15 - 20 minutes, or until puffed and golden.

Preheat the oven to moderately hot 200°C (400°F) Gas 6.

2 sheets of ready-rolled shortcrust pastry

1. Grease two round-Based shallow 12-hole patty tins.

2. Lay 2 sheets of ready-rolled shortcrust pastry On a work surface and cut 12 rounds from each with an 3 inch cutter.

3. Line the tins with pastry, fill with one of the following suggestions and bake as instructed. Remove from the tins while warm and cool on wire racks.
