Mini Quiches (Smoked Salmon)

ingredients

makes 24.
1/2 cup cream cheese
1/4 cup cream
2 eggs
cracked black pepper
3 1/2 ounce smoked salmon

method

1. Put the cream cheese, cream and eggs in a food processor and mix together, then add some cracked black pepper, to taste.

2. Sprinkle a little finely chopped smoked salmon into the pastry case, you will need about 3 1/2 ounce smoked salmon.

3. Pour the cream cheese mixture over the top and bake for 15 - 20 minutes, or until puffed and golden.

Preheat the oven to moderately hot 200°C (400°F) Gas 6.

2 sheets of ready-rolled shortcrust pastry

1. Grease two round-Based shallow 12-hole patty tins.

2. Lay 2 sheets of ready-rolled shortcrust pastry On a work surface and cut 12 rounds from each with an 3 inch cutter.

3. Line the tins with pastry, fill with one of the following suggestions and bake as instructed. Remove from the tins while warm and cool on wire racks.
