Minted Peas with scallions and zucchinis

ingredients

serves 6
1 pound shelled fresh peas
1/2 pound French beans, trimmed
1 bunch of scallions, trimmed
1/2 pound zucchinis, trimmed
2 tablespoons Butter
7 fluid ounce carton creme fraiche
1 tsp sugar (optional)
3 tbsp roughly chopped mint leaves
salt and pepper

method

1. Cook the peas and French beans in a pan of boiling water for 5 minutes or until tender, then drain.

2. In the meantime, thickly slice the scallions. Cut the zucchinis lengthways into wedges.

3. Heat the butter in a skillet and saute the scallions and zucchini wedges for 3 minutes. Add the creme fraiche and bring to a simmer. Let bubble for 2 minutes.

4. Stir in the peas, French beans, sugar if using, and chopped mint. Season with salt and pepper to taste and serve at once.
