Mock Bisque or Tomato Bisque Soup

ingredients

serves 6
4 cups milk
3/4 cup dry bread crumbs
1/2 onion stuck with 6 cloves
Sprig of parsley
14 bay leaf
2 cups cooked tomatoes
2 teaspooons sugar
3 tablespoons butter
1 teaspoon salt
1/8 teaspoon pepper

method

2. Remove onion and bay leaf and rub through sieve.

3. Heat tomatoes with sugar to boiling; rub through sieve.

4. Reheat milk mixture with butter, salt and pepper.

5. Add tomatoes and serve at once with croutons or crisp crackers. If desired, garnish with whipped cream and a sprig of watercress.
