You can make this cream and use it safely to replace cream in any cold dessert set with gelatin. It makes an excellent pouring cream for fruit.
ingredients
makes about 1 1/4 cups
1/2 cup sweet butter, diced
5/8 cup milk
1/2 teaspoon gelatin
2 teaspoons cold water
1 - 2 teaspoons sugar (optional)
method
Put the butter in a pan with the milk and heat gently, but do not boil. Turn off the heat and stir until the butter has melted.
Soften the gelatin in the water in a cup, then pour on a little of the butter and milk mixture.
Mix well then return to the pan and add the sugar if using.
Pour the mixture into a blender and whisk for 1/2 minute. Pour into a bowl and chill for 8 hours.
