This mock scampi is a very good substitute for the real thing.
ingredients
serves 4
1 pound tail piece of monk fish (tile fish fillets), cut into strips
1 tablespoon All purpose flour
salt
freshly ground black pepper
2 small eggs, lightly beaten
1/3 cup dried white breadcrumbs
oil for deep frying
To garnish
fresh parsley sprigs
wedges of lemon
method
1. Add 2 teaspoons water to the eggs and beat together. Arrange the eggs, the seasoned flour and the breadcrumbs in separate dishes next to the fish strips.
2. Using tongs, dip each piece of fish in the flour, shaking off the excess, then into the egg mixture and finally into the breadcrumbs. Cover and refrigerate for 1 hour.
3. Heat the oven to 180°C (350°F) gas mark 4. Put some absorbent paper on a baking tray.
4. Prepare a deep fat fryer and heat the oil to 190°C (350°F) or until a cube of bread will brown in 60 seconds.
5. Deep-fry a quarter of the fish for 1 - 2 minutes until the coating turns golden brown. Transfer the cooked fish to the baking tray and keep warm in the oven.
6. Continue until all the fish is fried.
7. Transfer to a heated serving dish, garnish with parsley and lemon wedges and serve immediately.
