Mullet with tomatoes and capers is a most impressive dinner party dish.

ingredients

2 tablespoons oil
3 large onions, chopped
2 garlic cloves, crushed
2 pound tomatoes, blanched, skinned, seeded and chopped
1 teaspoon dried chervil
1 teaspoon dried tarragon
1 bay leaf
1/4 teaspoon dry mustard
1 tablespoon capers
2 tablespoons tomato paste
salt
freshly ground black pepper
4 pound grey mullet, cleaned
1 lemon, thinly sliced
parsley sprigs
method
1. Heat the oil in a saucepan. Add the onions and garlic and fry until softened. Stir in the tomatoes, herbs, mustard, capers, tomato paste and seasoning. Cook for 30 minutes.
2. Heat the oven to 180°C (350°F) gas mark 4. Make three diagonal, parallel cuts in both sides of the fish and rub all over with salt.
3. Place in a greased baking dish. Pour over the tomato sauce, then cover with foil.
4. Bake for 35 minutes or until the fish will flake easily.
5. Discard the bay leaf from the sauce.
6. Serve the fish garnished with lemon slices and parsley sprigs.
