1/4 cup butter
2 onions, peeled and finely chopped
1 pound brown-cap mushrooms, roughly chopped
4 tbsp chopped parsley
1/2 cup salted cashew nuts, toasted and roughly chopped
2 1/2 cups fresh white breadcrumbs
2 large eggs, beaten
salt and pepper
method
1. Melt the butter in a pan, add the onions and cook gently for 7 - 10 minutes until soft and golden. Add the mushrooms and fry briskly for 4-5 minutes until softened and the moisture has evaporated. Turn into a bowl.
2. Mix in the chopped parsley, cashew nuts and breadcrumbs. Leave to cool.
3. Add the beaten eggs and mix well to bind the stuffing, seasoning with salt and pepper.
note: This stuffing is sufficient for a 10 pound oven-ready turkey.
