Nasi Goreng

Cooking time: 20 minutes

ingredients

serves 4
3 large eggs
1/4 cup peanut oil
2 medium-sized onions, finely chopped
1 garlic clove, chopped
1 teaspoon chilli powder
1/4 pound peeled shrimps
1/2 cup diced, cooked chicken
2 tablespoons soy sauce
juice of 1/2 lemon
1 teaspoon brown sugar
1 1/2 cups cold, boiled long grain rice
2 firm tomatoes, sliced

method

1. Break the eggs into a bowl and beat until frothy. Place 1 tablespoon of the oil in a frying-pan about 8 inch in diameter.

2. Set over high heat. Pour the beaten egg into the pan. Allow the bottom to set and become firm — about 2 minutes.

3. Turn the omelet and cook it for a further 2 minutes. Keep the cooked omelet warm.

4. Pour the remaining oil in a large, heavy-bottomed frying-pan over medium heat.

5. Add the onions, garlic and chilli powder to the pan and stir-fry for 1 minute.

6. Add the shrimps, chicken, soy sauce, lemon juice and sugar. Stir-fry for 2 - 3 minutes.

7. Add the rice. Stir-fry for 2 minutes until the rice is heated through and coated with the fat.

8. Turn the rice into a heated dish. Cut the omelet into strips and make a lattice over the rice.

9. Decorate edges with sliced tomato. Serve immediately with side dishes of fried onions and peanuts.
