These delicious potatoes may be cooked in individual portions.

16 - 20 very small potatoes in their skins
3 tbsp olive oil
1 - 2 sprigs each of thyme, tarragon or 1 tbsp mixed dried herbs
salt and black pepper
method
1. Preheat the oven to 200°C (400°F). Grease one large sheet or four small sheets of foil.
2. Put the potatoes in a large bowl and add in the rest of the ingredients and seasoning. Mix well so the potatoes are thoroughly coated.
3. Put the potatoes on the foil and seal up the parcel(s). Place on a baking sheet and bake for about 40-50 minutes. The potatoes will stay warm for quite some time if left wrapped up.
