1. Steam the potatoes for 20 minutes. Add the snow peas to the steamer and steam for a further 5-10 minutes or until the vegetables are just tender.
2. Melt the butter in a small saucepan.
3. Turn half the vegetables into a warmed serving bowl, season, add a little mint and toss in half the butter.
4. Add the rest of the vegetables and sprinkle over the remaining butter.
5. Season once more and add the remaining mint.
