Sprinkle this quick supper dish with grated Parmesan cheese just before serving. Use smoked bacon, cut into matchsticks and fried if you cannot get prosciutto. Serve the noodles with a dish of creamed spinach.
ingredients
serves 4 - 6
1 pound noodles
1 tablespoon vegetable oil
4 teaspoons salt
1/4 cup butter, diced
1/2 teaspoon black pepper
1 teaspoon dried basil
2 ounce prosciutto, cut into thin strips
6 ounce cooked lean ham, cut into thin strips
1/4 pound garlic sausage, cut into thin strips
2 large tomatoes, blanched, peeled, seeded and cut into strips
method
1. Put the noodles in boiling water, adding 1 tablespoon salt and the vegetable oil to the water.
2. Cook for 7 - 10 minutes until cooked but still firm, then drain.
3. In a large saucepan, heat the noodles and butter over very low heat. When the butter has melted, using two forks, toss the noodles until they are coated with the butter.
4. Add the remaining salt, pepper, basil, prosciutto, ham, sausage and tomatoes.
5. Increase the heat to moderate and cook the noodle mixture, stirring frequently with a wooden spoon, for 6 - 8 minutes or until it is very hot.
Serve immediately.
