about 2 pound fresh fruit — for example, apples, blackberries, blackcurrants, gooseberries, plums or rhubarb

TOPPING
1 cup All purpose flour
1/4 cup butter
1/4 cup sugar
1 cup chopped walnuts or filberts
method
1. Prepare the fruit according to its type; mix two or three different types if you like. For example, mix apples with blackberries, rhubarb with sliced bananas, plums with a little orange rind. Lay the prepared fruit in an ovenproof dish and sprinkle with sugar to taste.
2. Sift the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs.
3. Stir in the sugar and nuts and sprinkle this mixture over the fruit.
4. Cook in a moderately hot oven (190°C, 375°F, gas 5) for about 45 minutes, or until the topping is brown and the fruit is cooked through.
5. Serve with custard or cream.
