makes about 4 dozen
6 tablespoons butter
1/3 cups soft brown sugar
2 eggs, beaten
1 egg yolk
1 teaspoon vanilla extract
1 1/2 cups flour
1/2 teaspoon baking powder
6 ounce rolled oats soaked in 4 tablespoons (1/4 cup) milk
method
1. Heat the oven to 180°C (350°F).
2. Cream the butter with 1 1/4 cups of the sugar until fluffy.
3. Beat in the eggs, egg yolk and vanilla.
4. Sift together the flour, salt and baking powder and fold into the creamed mixture, followed by the soaked oats.
5. Drop small spoonfuls of the mixture on to greased baking sheets, keeping them spaced about 2 inch apart. Sprinkle with the remaining sugar.
6. Bake for 10 - 12 minutes or until golden brown.
7. Transfer immediately to a wire rack to cool.
