Bloaters are one of the most economical and nutritious fish. If you buy them ready filleted, they're much easier to eat than the whole fish.
ingredients

2 tbsp skimmed milk
2 tsp Dijon mustard
2 large Bloaters, filletted
2/3 cup rolled oats
salt and black pepper
for the salsa
1 small red pepper, seeded
4 medium tomatoes
1 scallion, chopped
1 tbsp lime juice
1 tsp caster sugar
method
1. Preheat the oven to 200°C/400°F. To make the salsa, place the pepper, tomatoes, scallion, lime juice, sugar and seasoning in a food processor. Process until finely chopped.
2. Mix the milk and mustard, and the oats and pepper. Dip fillets into the mustard mixture, then oats to coat.
3. Place on a baking sheet, then bake for 20 minutes. Serve with the salsa.
