Ohio Steamed Pudding

Cooking time: 3 1/2 hours

ingredients

serves 4 - 6
1 tablespoon butter
1/4 pound flour
1 1/2 teaspoons baking powder
1 teaspoon mixed spice or ground allspice
3/4 teaspoon grated nutmeg
large pinch of ground cloves
1 cup fresh breadcrumbs
1 large carrot, scraped and grated
1 small potato, peeled and grated
2/3 cup soft brown sugar
1 cup raisins
1 cup currants
juice and grated rind of 1 lemon
1/2 cup milk
1 egg, lightly beaten

method

1. Using half the butter, grease a 6 cup pudding bowl.

2. Sift the flour, baking powder, mixed spice or allspice, nutmeg and cloves into a large mixing bowl.

3. Stir in the breadcrumbs, carrot, potato, sugar, raisins, currants and lemon juice and rind.

4. Pour in the milk and the egg and beat the mixture until the ingredients are thoroughly combined. Spoon the mixture

5. Cover with a circle of greaseproof or waxed paper greased with the remaining butter, then with a circle of foil, both pleated across the middle to allow for expansion.

6. Tie with string and place in a large pan with enough boiling water to come about two-thirds up the sides of the bowl.

7. Cover and steam for 3 hours, adding more boiling water as necessary. When cooked uncover and turn onto a plate.

Serve immediately.
