Olive and Caper Pizza

ingredients

serves 2
3/4 cup potatoes
Salt and pepper
2 cups self rising flour
1/4 cup butter
3/4 pound Tomatoes
4 Anchovy fillets
1 tbsp Capers
1 cup Black olives
4 tbsp Milk
2 tsp Dried oregano
1 tbsp Olive oil

method

1. Preheat the oven to 425°F (220°C).

2. Peel potatoes and cut into small chunks. Cook in boiling salted water till tender.

3. Meanwhile, sift the flour into a bowl and rub in the butter till the mixture resembles fine breadcrumbs. Blanch, peel and chop tomatoes. Chop anchovy fillets. Drain capers. Stone olives.

4. Drain potatoes and mash well. Stir into rubbed-in mixture. Add milk and mix to form a soft dough. Knead lightly till smooth. Roll out dough and use to line a greased 9 inch pizza pan or flan tin.

5. Arrange tomatoes, anchovies, capers and olives on top. Sprinkle with salt, pepper and oregano. Sprinkle olive oil over and bake for about 55 minutes till well risen and golden. Cut into wedges to serve.
