makes 2 cups
1 cup cream cheese, softened
6 1/2 ounce feta cheese
3/4 ounce basil leaves
3 tablespoons olive oil
15 Kalamata olives, pitted and roughly chopped
method
1. Combine the cream cheese, feta cheese, basil, 1 tablespoon of the oil and 1/4 teaspoon cracked black pepper in a bowl and mix until smooth.
2. Fold in the olives and spoon into a serving bowl. Smooth the top with the back of the spoon.
3. Pour the remaining oil over the top. Garnish with a little more cracked pepper and serve with warm bruschetta.
