Onion Quiche

Freezing Suitable: reheat from frozen, covered, in 350°F (180°C) oven for 20 minutes

ingredients

to serve 4
1 pound Medium-size onions
1/4 cup (2 ounce) shortening
4 ounce Smoked fatty bacon
6 ounce Rich shortcrust pastry
3 Eggs
1/4 pint Milk
1/4 pint Carton of light cream
Salt and pepper

method

1. Preheat the oven to 400°F (200°C).

2. Peel and thinly slice the onions. Melt the lard in a skillet and fry the onions over a moderate heat till pale golden.

3. Derind and dice the bacon and add to the pan. Fry for a further 4 - 5 minutes till the onions and bacon are golden brown.

4. Roll out the dough and use to line an 8 1/2 inch flan dish. Prick the bottom and bake blind for 15 minutes.

5. Remove foil and baking beans and spread the onion and bacon mixture over the pastry base. Mix the eggs with the milk and cream and season to taste. Pour over the onions.

6. Bake for a further 25 minutes till lightly set and golden. Serve hot with mixed salads.
