1. Peel and slice onions. Melt half the butter in a large saucepan and cook onions till transparent. Sprinkle onions with flour. Cook, stirring, until flour colours. Add sugar, then gradually stir in water. Simmer for 20 minutes.
2. Preheat the oven to 450°F (230°C).
3. Fry bread in remaining butter. Place bread slices in bottom of individual bowls or ovenproof soup tureen. Add wine and seasoning, then pour soup over bread. Grate cheese and sprinkle it into the bowls. Bake for 5-10 minutes to melt the cheese.
