Onions in herb sauce

COOKING TIME: 25 minutes

ingredients

serves 4
1 tablespoon corn oil
1 pound button onions, peeled
2 level tablespoons All purpose flour
7/8 cup vegetable stock
1/2 cup skimmed milk
1 level teaspoon dried mixed herbs
Freshly ground black pepper
1 level tablespoon chopped fresh parsley

method

1. Heat the oil in a skillet or heavy-based saucepan and cook the onions in it over a moderate heat for 5 minutes, stirring and shaking frequently, until they are lightly browned all over.

2. Mix in the flour and cook it gently for 1 minute, stirring, then gradually stir in the stock and milk. Scatter on the herbs, season with pepper and cook over a moderate heat, stirring continuously, for about 5 minutes or until the sauce is smooth and thickened.

3. Lower the heat and simmer, covered, for about 15 minutes, stirring occasionally, until the onions are tender. Pour into a warmed serving dish and sprinkle with the parsley.
