Onions Smothered with Walnuts

This original way of serving onions makes a hot crunchy dish to serve with roast meat or boiled chicken.

ingredients

serves 4
1 teaspoon butter
1 pound pickling (pearl) onions, peeled
3/4 cup walnuts, chopped
2 tablespoons butter, melted
2 tablespoons clear honey
1 tablespoon chilli sauce
1/2 cup chicken stock
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon Worcestershire sauce

method

1. Heat the oven to 170°C (325°F). Use the butter to grease a medium-sized ovenproof dish. Set aside.

2. In a medium-sized mixing bowl, combine the whole onions, walnuts, melted butter, honey, chilli sauce, chicken stock, salt, pepper, cinnamon and Worcestershire sauce.

3. Pour the onion mixture into the ovenproof dish. Cover the dish with foil and place it in the oven.

4. Bake the onions for 1 1/4 hours or until they are tender when pierced with the point of a sharp knife, and well browned.

5. Turn them in the sauce once or twice during the cooking period. Remove the dish from the oven and serve.
