Orange and Almond Pudding

ingredients

serves 4
1/2 cup soft margarine
1/2 cup superfine sugar
2 eggs, beaten
grated rind and juice of 1 orange
1 cup + 2 tablespoons self rising flour, sifted
1/2 cup Ground almonds orange slices to decorate (optional)

For the Sauce
2 teaspoons cornstarch
1/2 pint orange juice
1 tablespoon corn syrup

method

1. Cream the margarine and sugar together until soft and light. Gradually beat in the eggs and orange rind and juice, then fold in the flour and almonds.

2. Pour the mixture into a greased 2 pint pudding basin, cover with greased foil and steam over a pan of simmering water for 1 1/2 hours.

3. Meanwhile, make the sauce. Moisten the cornstarch with a little of the orange juice.

4. Place the remaining juice in a saucepan with the syrup and bring to boiling point.

5. Add the moistened cornstarch and bring back to the boil, stirring constantly. Simmer for 2 minutes and serve poured over the pudding.

6. Decorate with orange slices, if you like.
