makes 4 glasses
1 pineapple, about 2 lb, sliced, skin, core and woody eyes removed, flesh chopped
1/2 pint freshly squeezed orange juice (about 4 medium oranges), strained
2 tablespoons lemon juice, strained
12 ice cubes
1/2 pint soda water or sparkling mineral water
2 orange slices, halved, and 4 pineapple chunks for decoration
method
1. Blend the pineapple in a food processor for 1-2 minutes, then strain through a nylon sieve, pressing with a spoon to extract all the juice. Discard the remaining pulp.
2. Mix the pineapple juice, orange juice and lemon juice in a jug.
3. Put 3 ice cubes into each of four tall glasses and pour a share of the fruit juice into each glass. Top up with the soda water or mineral water and stir well. Decorate with the halved orange slices and the pineapple chunks, threaded on cocktail sticks, and serve at once.
