Orange Yeast Buns

Orange yeast buns are like the traditional Chelsea buns. The addition of orange rind and juice gives them extra flavour.

ingredients

makes 10 - 15
3/5 oz cake fresh yeast
2 tablespoons lukewarm water
1/2 cup milk
3/4 cup butter
4 cups flour
1 teaspoon salt
2 eggs, beaten
1/2 cup sugar
2/3 cup currants
grated rind of 2 large oranges
1 tablespoon chopped mixed peel
1/4 teaspoon ground cinnamon

for the icing

2 1/4 cups confectioners sugar
2 tablespoons orange juice

method

1. Mash the yeast and the water together, then leave in a warm place until the mixture is puffed up and frothy. Scald the milk in a saucepan and add 2/3 cup of the butter. When it has melted, remove from the heat and allow to cool to lukewarm.

2. Sift the flour and salt into a bowl. Make a well in the centre and put in the yeast and milk mixtures and the eggs. Gradually draw the dry ingredients into the liquid with a spoon. Continue mixing until the dough comes away from the sides of the bowl. Knead the dough until it is smooth and elastic, then leave, covered, to rise in a warm place for 1 - 1 1/2 hours or until almost doubled in bulk.

3. Knead the dough for 2 minutes. Roll it out into a square. Sprinkle with the sugar, currants, orange rind, peel and cinnamon. Roll up the dough like a jelly roll, then cut into 1 1/2 inch slices. Place the slices close together, cut sides up, in a large greased baking pan. Leave them to rise for 20 minutes.

4. Heat the oven to 190°C (375°F).

5. Bake the buns for 30 - 35 minutes or until golden brown. Cool slightly.

6. Meanwhile, make the icing. Combine the sugar and orange juice. Pour this icing over the buns on the baking sheet. Leave until they are cool enough to handle, then break them apart and cool completely on a wire rack.
