Honey, ginger and soy sauce give a taste of the East to crisp sliced and diced vegetables.

1 clove garlic, cut in half
1 teaspoon clear honey
2 teaspoons soy sauce
1/4 level teaspoon ground ginger
2 teaspoons red wine vinegar
2 teaspoons sesame or peanut oil
2 cups button mushrooms, wiped and trimmed
1 small yellow pepper, de-seeded and diced
8 radishes, trimmed, washed and sliced
2 level teaspoons chopped fresh cilantro or parsley
1 level teaspoon sesame seeds
method
1. Rub the inside of a large bowl with the half-cloves of garlic. Whisk the honey, soy sauce, ginger, vinegar and oil in the bowl.
2. Slice the mushrooms very thinly and add to the dressing with the pepper and radishes. Toss well, cover and refrigerate for 20 minutes.
3. Spoon the salad onto a serving plate, sprinkle with the cilantro or parsley and the sesame seeds, and serve at once.
