Oriental Relish

A delicious relish to flavour any plain dish, stored in airtight jars in a cool place, it will keep for up to 6 months.

ingredients

makes about 6 pound
3 lemons
5 pound canned tomatoes
10 medium-sized apples, peeled, cored
and coarsely chopped
4 x 2 inch pieces fresh ginger root,
peeled and finely chopped
2 tablespoons mixed spice or
ground allspice
2 pound sugar
1 pound soft brown sugar

method

1. Using a sharp knife, cut the lemons into quarters and remove any pips. Place the lemon quarters in a blender and process for 30 seconds.

2. Alternatively, grate the lemon rind and chop the remaining pith and flesh very finely.

3. Place the blended lemons, tomatoes with the can juice, apples, ginger and mixed spice or allspice in a very large saucepan.

4. Set the pan over high heat and bring the mixture to the boil, stirring constantly. Boil for 3 minutes. Reduce the heat to low and stir in both sugars. Simmer the mixture, stirring occasionally, for 1 - 1 1/2 hours or until it is thick.

5. Remove the pan from the heat. Ladle the relish into clean, warmed jars.

6. Cover and store in a cool dry place until ready to use.
