1 pound white bread flour
1 tsp salt
2 tsp fast-action dried yeast pinch of sugar
4 tbsp chopped chives
2/3 cup Parmesan cheese, freshly grated
1/2 pint milk
2 tablespoons butter, plus extra to grease
vegetable oil, to oil
method
1. Sift the flour and salt into a bowl and stir in the yeast, sugar, chives, and all but 2 tablespoons of the Parmesan.
2. Heat the milk and butter in a small pan until the butter is melted; cool slightly until tepid. Gradually add this warm liquid to the dry ingredients and work together to form a soft dough.
3. Knead for 8 - 10 minutes until smooth, then transfer to a greased bowl. Cover and leave to rise in a warm place for 1 hour.
4. Knock back the dough and divide into 8 pieces. Shape into balls, flatten slightly and put on an oiled large baking sheet. Cover loosely and leave to rise for 30 minutes.
5. Sprinkle the remaining Parmesan over the rolls and bake at 220°C (200°C fan oven) for 15 - 20 minutes until risen and golden. Cool on a wire rack.
